I needed to make a few last minute adjustments to this weeks menu, as I had not factored in a baseball game scheduled for tonight. It's a super busy week this week, with four games, three dance rehearsals, a camp-out, and a mother-daughter date! For the most part, everything is very quick and easy since I won't have much time to spend in the kitchen. There are a lot of sandwiches on the menu, as you can see. We need to be able to take our dinner with us if we're running behind schedule, and sandwiches allow for that.
